Delicious Italian Mediterranean Pasta! I would eat this pasta every day! Easy recipe.
Hi friends! Today I present you an incredibly delicious and easy to prepare pasta recipe. Eggplant, pepper and cherry tomato pasta, a light, healthy and very tasty first course. I assure you that everyone will like it! Try it now!
FIRST RECIPE
✔INGREDIENTS:
1 Medium eggplant
2 Peppers
3 Tomatoes
2 Garlic cloves
Olive oil 30g
Grated parmesan 50-60g

Pasta of your choice (300g) (Casarecce / Strozzapreti)
Water and coarse salt
🔷
Grated mozzarella
Basil or dried thyme
Bake the vegetables at 180°C (350°F) for 35-40 minutes. Put back in the oven for another 15 minutes as in the video.
SECOND RECIPE
✔INGREDIENTS:
1 Eggplant
Olive oil
250g cherry tomatoes
1 clove of garlic
Fresh basil leaves
80g grated parmesan cheese
200g tomato puree
Water for cooking
300g pasta (rigatoni)
Salt and pepper
