IN THIS VIDEO: I show you how to make easy slow cooker shredded chicken enchiladas, mexican style. Well mostly. 😂 But absolutely tasty and SLAMMED with flavor. What's better than that? INGREDIENTS: ✅ Red enchilada sauce - the big can 8 pack flour tortillas 1 bag cheese of your choice 2 jalepenos 4 chicken breasts 2 cups chicken stock 4 chiles guajillos 2 chile de árbol 3 cloves garlic 2 small tomatoes 1/4 white onion 3 bay leaves 2 TBSP salt 2 tsp black pepper 1.5 TBSP chicken bouillon powder 1 tsp cumin Remove seeds from chiles along with the inner vein. Add to almost boiling water for about 3 mins or until softened. Add chiles to blender along with onion, garlic, tomatoes and all your seasonings. Blend until you have a smooth red sauce. Check for salt. Add sauce to slow cooker with chicken stock. Whisk together so flavors incorporate. Place chicken breasts in liquid until submerged. Stan little holes in your chicken if desired. Add 3 bay leaves. Start your slow cooker. 6-8 hours on low or 4-6 hours on high About 3 hours in take chicken out and shred in a bowl with 2 forks or those really cool bear claw things If you have that. Add chicken back to slow cooker for the remaining time. Once your chicken is ready. Prepare enchiladas but spraying a pan with cooking spay. Pour a layer of enchilada sauce on the bottom of your pan. Add chicken and cheese to a tortilla and roll nice and right. Place in the pan neatly. Repeat process as needed. Layer enchilada sauce and cheese as desired or how i did in the video. Preheat oven to 350 and place enchiladas inside for 15 minutes. In the mean time slice up your jalepenos and sauteed in a pan over medium heat with a little olive oil. Add salt and pepper to taste. A pinch of oregano. Cook about 4-5 mins. Take enchiladas out of the oven. Add another layer of cheese and place jalepenos over cheese. This way they melt into the cheese. Put back in oven for 15-20 mins Broil on low for about 4 mins or until it starts bubbling and forming a golden crust. If this is your first time, keep an eye on it because it will burn if you leave it in for too long. Take them out and let rest for 5 mins. Enjoy.
