This classic banana cake is a staple in Malaysian kuih (sweet/snack) shops. They may look similar to banana bread, cut a slice and you'll see the difference instantly. Banana cake is much softer, lighter and of course cake like. It's also very moist! Traditionally made with a lot of eggs and butter, this recipe is completely eggless and 100% vegan! Vegan Asian Style Banana Cake
Makes 1 loaf

6 - 7 or 250g very ripe bananas
200g neutral vegetable oil
150g sugar
1 tsp vanilla
1/4 tsp salt

265 self raising flour
1 tsp baking soda
1 tsp baking powder

2 tbsp ground flaxseed
4 tbsp water

80g cold aquafaba
1/4 tsp cream of tartar

Method:

1. Mix the ground flaxseed with water and set aside for 5 - 8 minutes until thick and gloopy.

2. Peel bananas and mash until no large chunks remain. Stir in sugar, vanilla and salt. Lastly add the oil and stir to combine.

3. Sift the flour, baking soda and baking powder.

4. Preheat the oven to 180ºc or 355ºf.

5. Pour aquafaba into a cold bowl. Whip until soft peaks, about 5 minutes. Whip in the hydrated flaxseed in batches.

5. Spoon the mashed banana into the bowl and mix in batches.

6. Lastly, fold the flour in batches. Do not overmix.

7. Grease a loaf tin and pour the batter in.

8. Bake for 40 - 50 minutes or until a skewer pressed in the centre comes out clean.
