1 batter for idly and thosai.
Here am sharing 2 ways of making healthiest thosai / idly. One is the normal version and another one with beetroot. You too can make soft and fluffiest idly/thosai at home. For those who do not own idly steamer, just use normal non stick pan or small bowl to pour the batter. And those who do not want to include the beetroot, just exclude and cook the white normal idly/thosai.

Ingredients
3 cups of rice
1 cup urad dal / kacang ulunthu
1 tsp fenugreek
1 1/2 cup of beetroot
1 cup cooked rice
3 cups of water
salt

































































Method
Wash and soak rice, urad dal and fenugreek for 5hrs. Soak beetroot together. After 5hrs remove beetroot and keep in fridge to blend later. Blend finely the soaked ingredients with rice and water (use the soaked water). Transfer to pot. Add salt and mix with your hand for 1-2mins. Keep aside for fermentation, it takes roughly 8-10hrs. When the batter rise, blend the beetroot with little water (after blend should be 1/2-1 cup) and add together with batter. Mix well. Use idly steamer or non stick small bowl to steam. Steam for 5-10mins depends how big is the tray. Poke with stick to check. Transfer to plate and allow to cool. Next, use the same batter to make thosai.
Heat and grease non stick pan with oil. Pour the batter and gently spread the starting from the centre and moving outwards. (you can click the video link shared to check out). Cook using medium to low heat. Cook till base is golden and crisp. Then fold with spatula and lift it from the pan. Enjoy with yummy chicken curry and chutney.
