This recipe is so yummy! This is a big 16 Quart recipe..I made for 9 people and enough to eat two days in a row. Posole does take about 3 hours to make but that's why I always make alot :) My family loves so much and its perfect for this time of the year! Ingredients
10 pounds of pool shoulder roast or butt
3 onions
8 garlic cloves
2 TBS salt
4-5 bay leaves
16 Chile New Mexico or Chile guajillo or combo of both
6 ancho Chiles
8 Chile de arbol
3 TBSP chicken bouillon
108 OZ BIG hominy ..white or yellow will work
Head of cabbage
radish
3-4 avocados
4-5 lemons or limes
Tapatio
Tostadas or chips or both
sour cream
cheese
