Curry Mee is a Southeast Asia originated dish,mostly known in Malaysia ,Singapore and Indonesia
It is made with coconut milk, i have listed below the ingredients and the method,these are much more like a snippets of recipe that i hope you enjoy.

2 tablespoons oil
1 onion, sliced thinly
1 tablespoon ginger garlic paste
1 stick lemongrass chopped
1 tablespoon red curry paste
½ pound boneless skinless chicken thighs, thinly sliced
3 tablespoons curry powder
½ teaspoon turmeric
1 13.5 ounce can coconut milk
2-3 lime leaves for taste
1 teaspoon sugar
Yellow Noodles & Rice Noodles
salt, to taste
2 handfuls raw bean sprouts, washed and trimmed
Long Beans 8-9 chopped
6-8 cubes of fishcakes ( fried seperately )
Tofu Chopped finely (this get soft easily add in towards end)
Mint Leaves

Method :
Heat the oil in a pot in a medium heat and add the onions ,garlic and giner paste also add in the lemongrass.
Cook for about 5-6 minutes,until it turns golden, add in the curry paste ,and the chicken continue to fry it till the chicken is cooked add in some salt in the process
Add in the curry powder, turmeric , lime leaves , sugar and coconut milk.
Let in boil in low heat .

Meanwhile cook the noodles ,once you noticed the oil is coming up to its surface add in the bean sprouts and long beans ,add salt as needed.
Lastly add the soft tofu and the fish cakes and top it with Mint Leaves
