Beyti kebab is a Turkish dish made with minced beef, grilled on a skewer and served wrapped in durum bread or tortilla pancakes, topped with eggplant tomato sauce and yogurt.

1. Prepare the minced meat:
In a bowl add a red and green pepper, a tomato and parsley and a chopped onion, the paprika, cumin, a clove of garlic, the red pepper concentrate, salt and pepper. Mix well to obtain a homogeneous preparation. Make skewers, cover them and let stand for 1h30 in the fridge.

2. Prepare the durum bread:
Pour in the milk add the dry yeast add the water then the flour, knead for about 5 minutes then cover and leave to stand for 1 hour. After the rest time, lightly sprinkle the work surface with flour, also sprinkle the dough with a little flour, cut the dough into 6 pieces of approximately 76 grams each. Spread the dough out on a lightly floured work surface, until about 20/25 cm in diameter (the size of a pancake) remove the excess flour and heat a pancake pan or pan without fat . The pan really needs to be hot. Lightly bake the breads on each side of the pancake without overcooking it, it should not color. Be careful, the cooking is quite fast! Once they are baked stack the baked breads on top of each other so that the loaves do not lose flexibility and cover with a cloth. To keep the breads, cover them well so that they do not dry out!
Suggestion: If you use them the same day, consider putting them in a food bag to prevent them from drying out.
3. Prepare the tomato / eggplant sauce:
In a pan, roast the eggplant (the eggplants are ready when the skin is slightly crunchy and the eggplant is soft inside), the red pepper, and the green pepper, without fat, turning them regularly. Collect as you go those which are cooked. Once they are cooked peel off the skin of your roasted red / green peppers and the skin of the eggplant.
Chop the onion, brown them in a pan with the oil and dice the tomato and add it to the pan. Sauté for 5 minutes over medium / low heat.
Meanwhile, finely chop the eggplant, red and green pepper. Add them to the pan, then add the sweet pepper flakes and powder, salt and pepper, red pepper concentrate, and 1/2 glass of water, cover and simmer over low heat for 5 to 10 minutes.


4. Yoghurt sauce: in a container add Turkish yogurt, a clove of grated garlic, and dry mint, mix everything together and set aside.
5. Parsley sauce: finely chop the parsley, grate the garlic, add the sweet pepper flakes, paprika, brown-amber melted butter with a nutty smell, salt, mix everything then set aside.

6. Cook the meat skewers. Spread parsley sauce on the durum pancake, add a little mozzarella, and arrange the meat skewers then wrap in the durum bread pancake, cut the tubes obtained into 2-3cm pieces. Make skewers with the pieces obtained, and brown them in the pan on each side (quickly).
Dress according to your choice. Add a little mozzarella on top of the tomato sauce then place in the oven on the grill position until the cheese melts. Pour in melted butter in a chestnut-amber color with a nutty smell. Taste without delay
🔴Recipe:
Ingredients for minced meat
-350G ground beef
-1 red pepper 1 green pepper
- 1 tomato
-parsley
-1 tbsp of red pepper concentrate
-1 teaspoon of cumin, paprika, salt,
-1 clove of garlic
-1 onion

🔴Ingredients for 6 Dürüm:
-270G of flour
-140 ml of water
-60 ml of milk
-5G of dry yeast
- a pinch of salt

🔴Ingredients for the tomato / eggplant sauce:
-2 eggplants
-1 red pepper
-1 green pepper
-5 tomatoes
-1 tbsp of sweet pepper flakes
-1 teaspoon of ground sweet pepper
- salt and pepper
-1 tbsp of red pepper concentrate
- half a glass of water
-Mozzarella

🔴 Parsley sauce:
-parsley
- 1 clove of garlic
- chilli flakes
- paprika
-melted butter
- salt

🔴Yogurt sauce:
-Turkish yogurt
-A clove of garlic
-dry mint
-salt
