garam (hot) masala (a mixture of spices) is a blend of ground spices common in cuisines from the Indian subcontinent.

cinnamon sticks - 3 tbsp.
cloves - 3/4 tbsp.
mace- 3/4 tbsp.
whole nutmeg - 1
green cardamom- 1/2 tbsp.
black cardamom - 3
black pepper corns - 1/2 tbsp.
star Anise - 2
fennel seeds - 2tbsp
cumin seeds - 1/2 tbsp.
shajeera - 1 tbsp. (caraway seeds)
bay leaves - 8 small
