Ingredients

Cake batter:
2 cups of wheat flour (2x130=260g)
1 tablespoon of baking powder (12g)
1 pinch of salt
3 whole eggs
1.1/4 cup of sugar (225g)
1/2 cup of oil (120ml)
1 cup of chopped and drained pineapple (200g)
50g of fine grated coconut (optional)

Cake filling:
100g of candied fruit
1 tablespoon of wheat flour
50g of grated coconut flakes
200g of chopped and drained pineapple

Frosting:
3/4 cup of icing sugar (100g)
Pineapple juice or syrup until consistency adjusts.

Cup measure: 240ml
Dimensions of the pan/roaster: 29 x 12 x 6cm
Oven preheated to 180° C, bake for 40 to 45 minutes, test with a toothpick, if it comes out clean, you can turn it off and remove.
