ANDA TAWA MASALA
Preparation time 10 minutes
Cooking time 20-25 minutes

Ingredients BH
For Masala
2 tpsp black peppercorns
1tsp cumin seeds
1 tsp Cumin seeds, sfRT
1 heaped tbsp Coriander seeds,
3-4 Green cardamom,
3-4 black cardamom
½tsp Fennel seeds,
½inch cinnamon stick
salt to taste
1 ½ tsp Degi red chili powder,
½ tsp turmeric powder
A pinch of asafoetida,
For Ginger Garlic Paste
salt to taste
For Anda Tawa Masala
1tps oil
2 tsp ginger garlic paste
1/4 tsp Cumin seeds,
3 medium Onions, chopped,
1 medium Tomato, chopped,
1 tsp Tender Coriander stem, finely chopped
1 heaped tbsp Prepared Masala,
1cup fresh tomato puree
little water
1 tps oil
6-7 no. Hard boiled eggs, cut into half,
4-5 tsp prepared masala
2 tbsp Coriander leaves with stem, roughly chopped,
1 small Tomato, sliced,
2 tbsp Butter, cubed,
For Garnish
Coriander sprig,
Tomato, sliced,

For Tawa Masala
In a shallow pan, add black peppercorns, cumin seeds,
coriander seeds, green cardamom, black cardamom,
fennel seeds, bay leaf, cinnamon stick, salt to taste,
degi red chili powder, turmeric powder, asafoetida and
dry roast it for a minute on medium flame.
Transfer it into a mixer grinder jar and grind into a fine
powder.
Keep it aside for further use.
For Ginger Garlic Paste
In a mortar pestle, add garlic cloves, ginger, green chili,
salt to taste and make a coarse paste.
Keep it aside for further use.
For Anda Tawa Masala
In a flat deep tawa or shallow pan, add oil, ghee, once
it's hot, add prepared ginger garlic paste, cumin seeds
and saute it for a minute.
Add onions and saute it until translucent. Add tomato,
coriander stems and cook it well on moderate heat.
Add prepared masala and saute it well. Add tomato
puree, little water and let it cook well.
Transfer the masala side onto the tawa edges, add oil,
place boiled eggs, sprinkle some prepared masala
and shallow fry them until golden.
Add green chili, coriander leaves stems, tomato, little
water and mix it altogether.
Finish the tawa masala with some butter.
Transfer it to a serving dish or bowl, garnish it with
coriander sprig and tomato sliced.
Serve hot with ladi pav or roti.
