This recipe is as easy as making pancakes! Ingredients: 2 cups All-Purpose Flour 2 tsp Baking Powder 1 tsp Salt 1 tbsp Cinnamon Powder 1 cup shredded Pumpkin 1 cup brown Sugar 1 tbsp Apple Cider Vinegar 1 cup plantbased Milk 1/4 cup Vegetable Oil 1 tsp Vanilla extract 1/3 cup Raisins 1/3 cup chopped Nuts 1 tbsp for greasing the muffin tin Procedure: 1.Preheat oven to 180 degrees C. 2. In a bowl, mix together dry ingredients such as: flour, baking powder, salt, sugar, cinnamon powder. 3. Pour in the apple cider vinegar, milk, vanilla extract and oil into the dry ingredients and mix. 4. Add the shredded Pumpkin and Raisins and mix 'til smooth. 5. Brush the Muffin tin with vegetable Oil. Scoop the batter into a greased tin and sprinkle top with chopped nuts. 6. Bake for 20 minutes. Insert a toothpick in the middle of the muffin to test the doneness. When the toothpick comes out clean, it's done. 7. Let it cool for about 10 minutes before removing from the Muffin tin.
