A Bengali home-style recipe for shrimp with pumpkin.

This dish is  traditionally learned from mothers and is very comforting.

Fry the shrimp after coating them with turmeric and salt.
Take out the shrimp and put some bay leaves, dried chilies, and panch phoron (a Bengali five-spice blend) in the oil.
Fry chopped onions until softened.
Add chopped pumpkin and cubed potatoes to the pan and stir for a while.
Add a teaspoon of chili powder, a little less than a teaspoon of turmeric powder, and salt to taste.
Cover the pan and let it simmer until cooked through.
Add a little bit of sugar and some flour to thicken the gravy.
Finally, put the shrimp back in the pan and stir everything together.
Serve the shrimp with pumpkin curry with hot rice.

Use small shrimp for better taste.
No other spices are needed other than what’s mentioned in the recipe because the pumpkin releases its own flavor while cooking.
Add a little bit of flour to thicken the gravy at the end.
