⏩Ingredients for 15 to 20 Potato Pancakes:
1 Kg of Potatoes (8 medium Potatoes).
80 to 100 gr of Parmesan / Cotija /feta or some cheese to melt (1 Cup).
60 to 80 gr of breadcrumbs (1/4 Cup + 2 Tbsp).
2 Medium Eggs (100 gr of liquids).
Salt to taste, (2 tsp for boiling potatoes and 1/4 to 1 tsp for potato pancakes depending on the cheese you use).
1/2 tsp garlic powder.
1 tsp dried thyme or 1 to 2 tbsp fresh thyme.
1 handful of fresh parsley.
Cheese to melt like Manchego, chihuahua, gouda in cubes.
⏩Tips and recommendations:
1. You can fill the potato pancakes with the cheese to melt or you can use cream cheese, prepared ground beef or if you do not want to fill them they will also be delicious.
2. Use the fresh spices that you like the most, I decided to use parsley but if I had fresh thyme I would also add it.
