Okra and Potatoes Stir Fry  / Bhindi Aloo Sabzi
Okra and Potatoes,  (called Bhindi Aloo) is a  stir fried vegetarian dish that combines the earthy flavors of okra (bhindi) with the comforting taste of potatoes (aloo). This vegetarian side dish is a staple in many Indian households and pairs wonderfully with steamed rice, roti, or parathas.

INGREDIENTS :
• Okra/Lady fingers- 350 Grams
• Potatoes - 2 medium
• Onion  - 2 large
• Mustard seeds - 1 tsp
• Cumin seeds - ½ tsp
• Curry leaves - few
• Garlic  - 3-4 cloves
• Green chilli - 1
• Turmeric powder- ½ tsp
• Chilly powder - ½ tsp
• Coriander powder- ½ tsp
• Cumin powder - ½ tsp
• Mango powder - 1 tsp
• Asafoetida/hing - ¼ tsp
• Garam Masala - a pinch
• Salt to taste
• Coriander leaves (for garnish)
• Oil   - 2 tbsps

METHOD :
• Wash the Okra/Lady fingers nicely  & dry and wipe  them using a clean kitchen towel.
• Once dried, cut them into thick dices & transfer them into a bowl.
• Dice the potatoes into the same sized dices & place them in water so that they don’t discolour.
• Chop onion and green chillies and keep in a bowl.
• In a pan, put some oil and heat on low flame.
• When oil is hot add the mustard seeds and let them splutter.  Then add cumin seeds, garlic, green chillies & curry leaves. Stir well & saute on low flame for 1-2 minutes.
• Then add the sliced onions and stir till  the onions turn pale.
• Add the diced potatoes & cook over high flame for 2-3 minutes, then cover it with a lid & cook over low flame for 4-5 minutes until the potatoes are almost cooked.
• Once the potatoes are almost cooked add turmeric powder, coriander powder, cumin powder, salt and mango powder and stir till well mixed.
• Then  add the Okra/Lady fingers, stir well & then cover & cook over medium low flame until the Okar/Lady fingers get cooked.
• Lastly add a sprinkle of garam masala & fresh coriander.
• Serve hot with  chapattis and pickle.
