Grilled Corn Elote Recipe
Ingredients:
2 organic corn on cob, shucked, rinsed
3 Tbsp. mayonnaise
2 tsp. Fresh lime juice
Zest from one organic lime
1 tsp. Ancho chile powder
¼ tsp. Smoked paprika
¼ tsp. Garlic powder
1 Tbsp. Melted butter
1 tsp. Or more of sriracha sauce
½ cup or more of Pecorino Romano cheese, grated
Chopped fresh cilantro
Directions:
Combine the mayonnaise, ancho chile powder, smoked paprika, garlic powder, sriracha sauce, lime zest and juice to a bowl. Stir until well mixed.
Preheat your grill to medium high heat. Brush melted butter all over the corn on the cobs and place on the grill. Cook the corn between 10 and 15 minutes rotating every few minutes as it chars a bit.
Remove from the grill and slather with the ancho chile lime sauce generously. Then coat with a nice sprinkle of the grated cheese. Remember, you can use any cheese you like. Traditionally elote is made with cotija cheese but parmesan can also be used.
Also if you don’t want to grill your corn, you can also just boil it in water for 15 to 20 minutes.
Experiment with your elotes and enjoy!
