I discovered this amazing recipe a couple weeks ago, and so have been making it since in an attempt to perfect it. I've nearly done it. Vegan blue cheese dressing.. from RAW TAHINI. Recipe below!

Some the combination of tahini, acids like lemon juice and white wine vinegar, along with dill, nutritional yeast, garlic powder & onion powder, make this dressing work. It's very simple, but it's also very effective. Add some soaked raw cashews for that crumbly blue cheese texture, and it's very very close to a blue cheese. This is a great recipe for those who are vegan wanting that cheesy fix, but also great for those who are lactose intolerant too, or even just the vegan-curious!

INGREDIENTS
- About 1/2 cup raw cashews, roughly chopped and soaked in hot water for at least 30 minutes
- 1/4 cup raw tahini
- 1/2 lemon, a couple tablespoons of juice
- 1 tablespoon white wine vinegar
- 1 teaspoon nutritional yeast
- 1/2 teaspoon garlic & onion powder
- 1 - 2 tablespoons water, until desired thickness
- 1 tablespoon fresh dill, roughly chopped
- Some salt & pepper, to taste

1. Roughly chop raw cashews, and then soak them in hot water for at least 30 minuntes.
2. In a medium bowl, whisk together the raw tahini, lemon juice, white wine vinegar, nutritional yeast, garlic & onion powder well. Then add 1 - 2 tablespoons water, until you reach a thickness you like. Add the fresh dill, as well as the chopped cashews (drained), and mix those in. Season with salt and pepper, and you're ready!

Eat this dressing as you would blue cheese - on a salad, burger, or whatever else.
