Ingredients:

2 cups chickpeas (soaked overnight and boiled until tender)
2 onions (finely chopped)
2 tomatoes (finely chopped)
3 green chilies
1 tbsp ginger-garlic chopped
1 tsp cumin seeds
1 tbsp coriander powder
1 tbsp red chili powder
½ tbsp turmeric powder
½ tbsp cumin powder
½ tbsp garam masala powder
Salt to taste
2 tbsp mustard oil
3 Bay leaf
1 Black cardamom
4-5 cloves
2 tbsp thick Curd
1 tbsp Dried fenugreek leaves

Fresh coriander leaves (chopped for garnish)

Instructions:

Chickpeas, (soaked overnight and boiled with Black cardamom and cloves until tender)

Heat mustard oil in a pan. Add cumin seeds and fry for a few seconds until they start to splutter.

Add chopped ginger-garlic. Cook for a minute.

Add the chopped onions and sauté until they turn golden brown.

Add the chopped tomatoes and cook until they turn soft and mushy.

Add all the spice powders - kashmiri red chili powder, coriander powder,  turmeric powder, salt to taste, cumin powder and garam masala powder. Mix well

Add little water and fry masala.

Add the boiled chickpeas along with 1 cup of water.

Add Some mashed chickpeas for thick gravy, Mix well

Add dried fenugreek leaves and curd

Let it cook on medium heat for about 10-15 minutes until the gravy thickens.

Once the chole is cooked, garnish with chopped fresh coriander leaves.

Serve hot with rice, roti, or naan.
