Buon Giorno A Tutti!! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), demonstrates Limoncello Cookies!! These little bites pack a punch. They are so lemony, and so delicious, you'll feel like you are back on the Amalfi Coast. And fortunately, they are really easy to make too!

So, to start, mix the dry ingredients in a separate bowl:  3 cups of flour, a pinch of salt and a teaspoon of baking powder.

Then in the mixer, add 175 ml of virgin olive oil and 2 cups of sugar. Blend in 2 eggs and the zest and juice of two lemons (approx 100 ml), along with 25 ml of limoncello. Yummm.

Slowly blend in the dry ingredients, then cover and refrigerate for about an hour. The consistency needs to be firm enough to roll them into balls.

Nonna uses a tablespoon to help her roll consistent sized balls. She then rolls them in icing sugar, and places them on a tray lined with parchment paper.

She bakes them about 18 minutes at 350F. This will vary with ovens so monitor, and check the bottom of the cookie - you want them to be a golden brown colour. This recipe makes about 42 cookies.

Place the cookies on a rack to cool and then plate.

In this episode, Nonna also shares how Nonno built their home 50+ years ago (1970) and she also shares a 50th anniversary tray that granddaughter Gabriella made, 13 years ago - Nonno and Nonna celebrated their 63rd wedding anniversary the end of 2020. Good things were built to last!!
