Raisins provide sweetness, pecans enhance the aroma, sourdough and wholemeal strengthens flavor. The healthy staple bread is crispy on the outside and soft on the inside. It can be easily made at home.
Ingredients:
***Preparation:
150g Wholemeal flour (Urdinkel)
150g water
Mix and set aside for at least 2 hours
Pecan
Bake at 150C/300F for 8 minutes
50g raisins
10g rum
Raisins are soaked in rum in advance
*** Main dough:
300g bread flour
300g wholemeal dough
150g water
100g active sourdough starter
8g salt
50g pecan (chopped)
60g soaked raisins
proofing basket: 25x8.5cm
Preheat the oven and cast iron pot to 250C/480F in advance
Cover the cast iron pot, use 250C/480F, bake for 30 minutes
Remove the lid, cool to 200C/390F, and bake for another 10 minutes
