With the addition of fruits and Nuts on the base of Caramelized coconut, this cake has a very festive smell! The more you rest the fruits, the more tastier the cake gets! 🍰 Ingredients:
For the Sweetened Coconut
Desiccated Coconut 3/4 cup (75g)
Hot Water 3 tablespoons (45ml)
Sugar 1/2 cup (100g)
Water 1/4 cup (60ml) - to get a syrup consistency
Fruit base
Whole Dates 200g (about 1 cup)
Dried fruits 100g (3/4 cup) -
[I used a mix of dried raisins, currents, and candied peel bits]
Chopped nuts 50g (¼ cup)
Red Cherries 50g (about 1/2 cup)
Freshly grated ginger 1 tablespoon
Cinnamon powder (OR all spice powder) 1 teaspoon
Cardamom powder 1/2 teaspoon (optional)
Brandi 1/4 cup (60ml) OR 1/4 cup orange or grape juice
Golden syrup 2-3 tablespoons
Cake base
Plain Flour 1/2 cup (75g)
Semolina 1/4 cup (42g)
Melted Butter 1/3 cup (75g)
Baking powder 1 teaspoon
Baking soda 1/4 teaspoon
Measuring cup size - 240ml
6x 2.75-Inch Round Baking pan
Bake in a Preheated Oven at 170c (338f) for 40-45 minutes. Cover the top with a foil paper halfway through baking.
