Healthy Banana Oatmeal muffins! Perfect for toddlers, kids and the whole family! Prep in advance and have them for breakfast or snack! Recipe Below.

Dry Ingredients:
* 1 C whole wheat flour
* 1/2 C rolled oats
* 1 tsp Baking Soda
* 1 C Brown or Coconut Sugar
* 1 tsp Cinnamon
* 1 tsp Nutmeg
* Pinch of salt (flavour enhancement)

Wet Ingredients
* 2 Ripe banana's (riper the better, and sweeter)
* 1/2 C or 1 stick Unsalted butter (Must be room temperature)
* 2 eggs
* tsp vanilla
* splash of milk (to help with consistency. Batter should be thick and moveable)

- Preheat Oven to 325 degrees
- Prepare muffin tins by either using liners or spray tin with cooking spray, or brush with oil.

Start by mixing all dry ingredients together. Set aside

Cream the sugar and butter together. A hand blender is recommended for this. Cream for 2-3 minutes until a creamy paste is formed.
Add in banana's, followed by eggs (1 at a time) and vanilla. Beat for another minute or 2, ensure all ingredients have been incorporated.

Fold the dry ingredients into the wet ingredients, mixing carefully with a spoon. Do NOT over mix batter at this point. This will affect the texture of the muffins.

Evenly spoon the batter into the muffin tray. I like to use 1/4 measuring cup in each, then even out if need be.
You can also add extra toppings such as chocolate chips, chopped walnuts or almonds, ect.
