INGREDIENTS

20 lbs Turkey
1 gallon Buttermilk
2 large onions, sliced
12 cloves garlic (use 8 for brine, 4 for spice mixture)
3 TBS poultry seasoning
8 TBS Salt (for the brine)
2 TBS black pepper (for the brine)

Spice mixture

4 TBS Fresh sage
4 TBS fresh rosemary
8 TBS butter (1 stick)
1/4 olive oil
2 TBS crushed ginger
Salt and pepper to taste
2 Lemons

4 cups chicken broth

Stuff Turkey with;

4 fresh bay leaves
1 lemon
1 apple
1 onion

1 lb thick cut Bacon (14 thick slices)
