Ingredients

Milk
water
Vinegar
Saffron strands
Sugar
Dry fruits
Cardamom powder
Ice cubes and ice water


Process

Step 1
prepare the chena

Take a deep bottomed saucepan and boil 1  litre of milk at a high flame.keep stirring the milk to avoid burning..Once the milk starts boiling, turn off the flame. Mix 4 tbsp of water with 2 tbsp of vinegar or lime juice and add into the hot milk. Once the milk starts crumbling, drain out the excess water using a muslin cloth and tightly tie the crumbled milk extracts in the cloth. Hang for 2 hours and keep aside.

Step 2
Prepare The Saffron Milk For Rasmalai

Take a pan and boil 3 cups /750 ml of milk in it. Once the milk starts boiling, add saffron in it along with chopped pistachios and almonds and cardamom powder in it.. Allow this milk blend to attain a slightly thick consistency for about 5-7 minutes. Now, add 1 cup/250 gm sugar in it and mix well. Once the milk blend is reduced to 2 cups turn off the flame and transfer it to a bowl.


Step 3
Prepare balls

Rub the chhena till it's soft like white butter and make a dough out of it. Once done, make some balls with the dough and press them a little. Repeat the process till the dough is finished. Keep aside

Step 4
Prepare the sugar syrup

For the sugar syrup,put a wok over medium flame and add 1 cup/ 250 gm of sugar in it along with 6 cup of water... Just boil the water and your sugar syrup is ready, add your chena balls in the sugar syrup and boil for 15 minutes. The chena balls will turn double and this is the indication to turn off your flame.


Step 5
Deep the balls in ice water.

Now, add the balls in bowl filled with ice cubes and ice water... Keep in it for 5 minutes..

Step 6
Add in saffron milk.

Squeeze the extra water and add the rasmalai in saffron milk. Let the rasmalai soak for 3-4 hours to absorb the creamy texture of the milk. It tastes best when served chilled!
