Today’s recipe is Diwali faral shankarpali using 1 kilo maida. It turns out nice, crispy and flaky. Diwali faral is incomplete without shankarpali. We already have seen different recipes if shankarpali. This is full proof recipe the proportion used is just perfect. It is a very easy and simple recipe. You can make it within no time. Besides, I am sharing few tips to make perfect shankarpali. This is a popular Marathi recipe. Also it can be a good tea time snack. You can try this recipe at home and drop a comment for me. Ingredients:
• 1 cup Milk
• 1 cup Sugar
• 1 cup Ghee
• 7 cups / 1 kilo Maida
• Oil for frying

Method:
• Heat up a pan on medium heat and add milk and sugar.
• Heat it up together until sugar is dissolved.
• When sugar is dissolved and the mixture begins to boil, turn off the gas and add ghee.
• Melt ghee before measuring. Make sure you don’t use thick ghee.
• Mix well and base for shankarpali is ready.
• Transfer the base into the maida and mix in with the help of ladle.
• Knead the mixture into dough.
• Make small portions of the dough. Keep the leftover dough covered with a wet cloth.
• Take one portion and roll it into a thick chapati. The thickness of the chapati should be about 1
 cm.
• Cut off the edges and roll the chapati little more if you want.
• Cut shankarpali into size and shape you want and take them out into a dish.
• Rolled out shankarpali should not dry out.
• Heat up oil on high heat for about 5 minutes and reduce the heat to low.
• Drop shankarpali into hot oil and fry it well for at least 3-4 minutes.
• If oil is hot enough and still shankarpali dissolves in oil, then add a little more maida into the
 dough. Add a little milk and knead the dough again. Roll out shankarpali and fry. It won’t dissolve.
• When shankarpali gets nice golden color from all sides, take it out, drain excess oil and transfer it
 into a dish. Shankarpali is ready.
• You can store them in an air tight container when they cool down completely. They have shelf life
 of about 1 month.
