High protein flour should give you bigger bread ...right? Maybe. Maybe Not.

This video is about how flour quality is determined beyond the arbitrary misconception that protein content dictates baking performance. Here we discuss flour strength, how mix times are determined for various flour types and why some bakers struggle with or are unable to optimize their products even using high protein bread flour.

We take a quick look at farinograph curves to visually show you how these curves work and correlate directly to the flour you use in your own kitchen.
The video is a great way to gain better understanding of mix times and general  expectations  when working with different types of flour.

High protein does not always translate into strength of a particular flour in all cases. Understanding the differences and how to adjust for them will set the stage for improving your baking knowledge and skills.
