🛒 Ingredients (3-4 servings):

🔸 500 g desalted cod (1 lb)
🔹 500 g potatoes (1 lb)
🔸 1 large onion
🔹 2 cloves of garlic
🔸 6 eggs M
🔹 chopped fresh parsley
🔸 2 bay leaves
🔹 30 ml olive oil (2 tbsp)
🔸 Salt
🔹 A pinch of white pepper
🔸 12 olives
🔹 Cooking oil

🍳 Directions:

1️⃣ Prepare the straw potatoes. Peel the potatoes and slice them very thin (3 mm / 0,1 in thick), I use a mandolin to help me. Cut the slices into thin strips (you can do this by putting four slices together, you don't need to do it one by one). Then put them in a large bowl with water to remove the starch and make them crispy.
2️⃣ Meanwhile, prepare the rest of the ingredients. Cut the onion in half and julienne each one. Remove the skin from the cod and crumble it with your hands into small pieces (so, if you notice any bones, you can remove them). Reserve in the refrigerator.
3️⃣ Drain the potatoes and dry them with a cloth. Fry them in plenty of hot oil (but not smoking) in batches, until golden brown. Place them on a plate with absorbent paper to remove excess oil. Set aside.
4️⃣ In a large frying pan, put the oil and cook the onion over medium heat with a little salt and the bay leaves until transparent. Halfway through cooking add the chopped garlic.
5️⃣ Add the cod and cook for about 3 minutes. Remove the bay leaves. Add the potatoes and mix them with everything.
6️⃣ Beat the eggs with a little salt, pepper and some chopped parsley. Add them to the frying pan and cook them mixing everything; leave them half set, they will finish cooking with the residual heat.
7️⃣ Serve our freshly cooked Bacalhau à Brás with more parsley on top and the olives.


👌 Notes:

🌿I don't add salt to the potatoes, as the bacalao de gives a lot of flavor to everything.

🌿There are those who use bagged straw potatoes and speed up and simplify in that way the preparation.

🌿 There are Portuguese who cook the cod, crumble it and add it to the pan already cooked.
