ZINGY + FRAGRANT PEA + EDAMAME SOUP #shorts

Serves 2
100g frozen edamame
100g frozen petit pois or peas
Couple handfuls spinach
4 spring onions
Coriander
1 scotch bonnet (sub for red chilli if you don’t like it too spicy!)
3 large garlic cloves
Chunk of ginger
600ml veggie stock
Tablespoon brown rice miso paste
Juice of 1 lime
Olive oil, salt + pepper
Garnish of choice (I used sesame seeds, coconut chips, coriander and red chilli)

1. Roughly chop chilli, garlic, ginger, spring onions and coriander while warming olive oil in a saucepan
2. Sauté spring onions for a couple of minutes, then add garlic. Once fragrant, add ginger. After a couple of minutes add the scotch bonnet
3. After another couple of minutes, add your petit pois and edamame. One heated through, add your veg stock and put on the lid.
4. Simmer for 10 minutes
5. Take off the heat, and add in your chopped coriander, spinach and brown rice miso paste. Stir
6. Blend, ladle out your portions, make it look pretty and you’re done! Enjoy ✨
