These homemade Oreo cookies really do taste like the real thing!

Filling:
1/2 cup butter softened
1/2 vegetable shortening
3 cups powdered sugar
1 tsp vanilla extract
Place in a large bowl and blend together. It will be crumbly to start.  Keep blending until the colour changes to a nice white colour and the mixture is smooth, light and fluffy.

Wafers:
4 oz-115g-8 tbsp  unsalted butter
3 1/2 oz-100g-1/2 cup white granulated sugar
2oz-55g-3 tbsp golden syrup (I used golden corn syrup)
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp coconut extract, optional, but apparently IS the secret ingredient
5 3/4 oz-165g-1 1/4 cups all purpose flour
1 1/4 oz-35g-1/3 cup plus 1 tbsp Dutch process cocoa. I used black cocoa I bought at the Bulk Barn.
A little more cocoa for dusting.

In a large bowl, combine the butter, sugar, syrup, baking soda, salt and coconut extract. Mix until light and fluffy.
Stir or sift the flour and cocoa together.
Start mixing the flour mixture into the butter mixture a little at at time.  It will look dry and crumbly at the start, but will come together and look a bit more moist as you stir.  
Bring the dough together into a ball with your hands.

Divide the batter into 3-4 portions and work with one at a time.
Sprinkle a little cocoa on the counter.
Roll out dough ball to 1/8" thickness, sprinkling with cocoa powder if rolling pin sticks.
Print rolled out dough with something if you like or use a cookie stamp.
Cut out 1.5" circles with a cookie cutter.
Place dough circles about 1/2 to 1" apart on a cookie sheet covered with silicone mat or parchment paper.
Bake at 350F for about 10 minutes.  It will be difficult to tell when they are done as they will not visibly brown.  They will lose their shininess and will feel firm to the touch when done.  They will crisp up when they cool.

I put my filling into a piping bag and piped a small amount of the back of one of the wafers.  Top with another wafer and press down lightly.
Store at room temperature.
