● Batter

one stick (115g) butter
five egg whites (155g)
1 ⅓ cup (175g) powdered sugar
½ cup (50g) almond flour
½ cup (50g) flour
½ cup (100g) pistachio praliné
2 tbsp (30g) pistachios

● Glaze

⅓ cup (100g) neutral glaze
1 tbsp (15g) water

● Steps:

1. Preheat the oven to 338°F (170°C).

2. Melt the butter on low heat until it turns brown and it stops sizzling. Strain it and let it cool.

3. Mix eggs, flour, powdered sugar, almond flour and pistachio praliné. Add the brown butter when it cools down to 113-122°F (45-50°C). Pour it in a piping bag and refrigerate for a few hours or overnight.

4. Fill the shells ¾ full and sprinkle with chopped pistachios.

5. Heat the water and glaze until the latter is completely dissolved. Brush the financiers with the glaze.

● Tips:

1. Strain the brown butter several times to remove all the burnt particles.

2. I highly recommend chilling the batter overnight.
