It doesn't get more British and regal than this classic Victoria sponge cake! Two delectably light and moist vanilla sponge cakes sandwich a velvety smooth and creamy buttercream, complete with raspberry jam, fresh raspberries (optional!) and finished with a dusting of caster sugar!

INGREDIENTS

Cake
200g (3/4 cup + 2 tbsp) butter, salted and soft
200g (1 cup) golden caster sugar (or normal caster sugar, superfine sugar)
4 eggs, room temperature
200g (1 3/4 cups) plain flour
12g (3 tsp.) baking powder
4g (1 tsp.) vanilla extract
1-3 tbsp. whole milk (depending on consistency)

Filling
160g (1 1/3 cups) icing sugar (powdered sugar)
80g (1/3 cup) butter
15ml (1 tbsp.) whole milk
60g (3 tbsp.) raspberry jam
raspberries (optional)
caster sugar, to dust (superfine sugar)
