What is fondue?
A Swiss melted cheese dish served in a communal pot (caquelon or fondue pot) over a portable stove (réchaud) heated with a candle or spirit lamp, and eaten by dipping bread into the cheese using long-stemmed forks. It was promoted as a Swiss national dish by the Swiss Cheese Union (Schweizerische Käseunion) in the 1930s, and was popularized in North America in the 1960s.
Recipe:
INGREDIENTS
15 gm butter
2 big cloves of chopped garlic
15 gm refined flour
150 ml milk
2 tbsp red chilli powder
1 tsp black pepper powder
15 gm dried fenugreek leaves
Salt to taste
150 gm cheese
1 tbsp white wine
INSTRUCTIONS
1. Melt butter in a large pan, and then add the chopped garlic.
2. Allow the garlic to simmer in the butter, then add flour and whisk it until combined (don't burn it!)
3. Pour in the milk, whisking the flour/butter mixture into the milk until there are no lumps.
4. Add chilli powder, pepper, fenugreek, and salt to taste. Mix.
5. Pour in the cheese, and combine until smooth.
6. Add the white wine, then mix again.
7. Serve in a bowl with potato, vegetables, or croutons to dip!
