Sago also called as sagu, saagu, sabudana, javvarisi, saggubiyam in some countries. Uncooked sago pearls have a pure white color and once cooked it have a clear transparent color. Sago pudding is a sweet dessert which is made by boiling pearls in a lot of water. The dessert is prepared after draining the excess liquid.

Ingredients for cooking sago pearl:
-10 cups water
- 1 cup sago pearl

Ingredients for cooking sago pudding:
- 300ml sweetened condensed milk
- 2 pieces rampa leaf (3 inch)
- 3 nos. cinnamon stick
- 10 nos. cardemon pods (top trimmed)
- 1/2 tsp food colouring of your choice (optional)


Directions:
- On medium - high heat, bring water to boil in a pot.

- Once heated, slowly add the sago pearls. Stir constantly to avoid any clumps.

- Do not wash the sago pearls as it will dissolve parts of the sago pearl.

- Boil until the sago pearls become clear / transparent. It takes around 15-20 minutes.

- Once sago pearls are clear, turn off the heat and add water (room temperature).

- The cooked sago pearls will be at the bottom of the pot. Carefully lift the pot and drain the excess liquid at the top. You can use a strainer too. I did not use a strainer.

- Put the cooked sago pearls back on the stove. Turn heat on to low heat. Add sweetened condensed milk, rampa leaf, cinnamon sticks, cardemon pods and food colouring of your choice. Food colouring is optional.

- Cook the sago pudding for 5-10 minutes on low heat to infuse all the aroma and flavor of the rampa leaf, cinnamon and cardemon pods.

- Serve hot or chilled. I like it both the ways.
