Origami Spring Into Action designed by Jeff Beynon

This is one of my favorite action models.  It is rather difficult to fold, but hopefully you'll be able to tackle it with help from this video.  I would recommend first folding my Origami Tsunami: Origami Tsunami by Jeremy Shafer It has a similar action and is a lot easier to fold.
