Ube Overload Cake Ala Red Ribbon

Hey my loves, this recipe is somewhat similar to my Ube Macapuno Cake that i posted last year (link below). This is my take on the famous Ube Overload Cake Ala Red Ribbon. I know most of us Filipinos love Ube or Purple Yam in any of our desserts that we can think of. today, I'm going to share with you the recipe:

Here's what you'll need:

Sponge Cake:

7 eggwhites
1/2 tsp cream of tartar or 1 tsp of lemon juice or 1 tsp vinegar
3/4 cup granulated sugar

1 3/4 cups all purpose flour
3/4 cups granulated sugar
1 tbsp baking powder
1 tsp salt
7 egg yolks
1/2 cup oil
2/3 cups milk
1 tbsp concentrated  ube flavoring
1 tsp purple food coloring
1/2 cup grated fresh ube

Frosting:

500ml whipping cream
1/3 cup granulated sugar
200 grams of cream cheese
1 tsp vanilla
