Making sugar from coconut nectar requires less work than extracting glucose from either sugar cane or sugar beets. Sugars such as glucose and sucrose are also present in the final product.

Coconut sugar is made by heating the sap that is taken from coconut palm flowers, which is initially a clear liquid but becomes a solid and dark brown substance due to the presence of sugar and minerals.

Fructose content in coconut sugar and cane sugar is almost the same. As far as our blood sugar levels are concerned, then, they seem to have identical impacts.

Coconut sugar's glycemic index  is between 55 and 84, making it a healthier alternative to regular table sugar. This is due to the fact that coconut sugar has a lower concentration of sucrose and a glycemic index of less than 35.



Because it has a lower glycemic index than regular table sugar, coconut sugar may be better for diabetics.



However, it is important to note that it will undoubtedly have an effect on blood glucose, perhaps not as high as table sugar but possibly causing a significant rise, because it contains between 80% and 90% sucrose in addition to 1% to 2% glucose and 2% to 4% free fructose.
