EVERYTHING you need to know about Starch Vs Cellulose.
In this video we start from the difference between alpha and beta glucose, to explain how as polymers cellulose and starch differ in structure and function.
Humans cannot digest cellulose because the enzymes that hydrolyze starch cannot break the beta glycosidic linkages of cellulose. However, cellulose stimulates mucus secretion in the digestive tract and hence aids in the digestion of food. Therefore, cellulose is very important in our diet.
Herbivores, like cows and koalas, have microorganism in their digestive system that have enzymes that hydrolyze beta bonds.
