INGREDIENTS

For the marinade:
1-1/2 lb chicken breast or thighs , cut into 1 inch piece
1/2 cup plain yogurt
1/2 tsp turmeric powder
1 tsp chili powder
1-1/2 tsp salt, or to taste
black pepper, to taste
1 Tbsp grated ginger
4 cloves of garlic, grated

For the sauce:
1 medium onion, diced
2 tsp garam masala
1 tsp chili powder
1 tsp ground cumin
1/2 tsp cayenne pepper, or to taste
1-1/2 cups tomato purée
1 cup of water
1 cup heavy cream
6 Tbsp butter, divided
Salt and pepper, to taste

INSTRUCTIONS
1. In a bowl, add chicken and all the ingredients for the marinade. Stir everything to combine. Cover it and place it in the fridge for 3 hour or overnight.

2. Once the time is up, melt 2 Tbsp of butter over medium high heat, in a pan with high sides. Brown chicken for few minutes, don't have to be cooked completely. Remove chicken to a plate.

3. Add 2 more Tbsp of butter and allow to melt. Add onions and cook until softened, 3-5 minutes. Add garam masala, cumin, chili powder and cayenne pepper, cook for about 30 seconds.

4. Add tomato purée, stir and bring to a simmer. Add water and mix together, return chicken to the pan, stir to coat it with the sauce. Lower heat to low, cover and cook for 15-20 minutes.

5. Stir heavy cream until is well combined. Add last 2 Tbsp of butter and stir to dissolve. Turn of heat. Taste and add salt and pepper to taste. Serve with rice and naan. Yum!
