Hamelman. The peculiarity of this bread is that oatmeal is added to the dough, which makes the bread very tasty, and the crumb is airy. Also, the recipe uses 2 times less yeast than traditional bread. I tell, as always, everything in great detail from A to Z, so that absolutely everyone can get bread.

Recipe:
75 g oatmeal
285 ml warm water
50 g warm milk
34 g honey
34 g vegetable oil
10 g salt
340 g wheat flour for bread (you can use the highest grade)
115 g whole wheat flour
2.5 - 3 g dry instant yeast (or 7.5 -9 g fresh pressed)
oatmeal for sprinkling
splash water
vegetable oil for greasing the bowl, hands and mold
Preheat oven to 230C or 460F 30 minutes before baking.
Bake
15 minutes at 230C or 460F (Bowl of boiling water on bottom shelf)
20-25 minutes at 210C or 430F (remove bowl)
