First, you will want to set your notifications so that it doesn't show who texted you on the lock screen, but just that you got a text. Next, you can go into the Messages app itself and change the name of the person you're texting with to something secret. That way if anyone gets into your iPhone they won't know who exactly that person is who you're texting.
