✍🏻INGREDIENTS:
For Sambhar:
* Pigeon pea (अरहर दाल) - 1 Bowl
* Tamarind (इम्ली)
* Water (पानी)
* Pumpkin (कद्दू)
* Salt (नमक) - As per taste
* Turmeric powder (हल्दी पाउडर)
* Ghee (घी) - 1 Tbsp
* Drumstick (सहजन)
* Oil (तेल) - 2 Tbsp
* Cumin (जीरा)
* Mustard seeds (राइ)
* Asafoetida (हींग)
* Curry Leaves (कड़ी पत्ता)
* Dry Red chili (लाल मिर्च) - 2-3
* Green chili (हरी मिर्च)
* Ginger (अदरक)
* Sambhar Masala (सांभर मसाला) - 2 Tbsp
* Tomatoes(टमाटर) - 1
* Onion (प्याज)
* Corrot (गाजर)
* Red Chili Powder (लाल मिर्च पाउडर)
* Green chutney (हरी चटनी)
* Coriander Powder (धनिया)
* Jaggery(गुड़) - As per taste
* Water(पानी)
* Salt(नमक)
* Red Chili Powder (लाल मिर्च पाउडर)

For Vada:
* Urad Dal (उड़द की दाल)-1 Bowl
* Ice (बर्फ़)
* Asafoetida (हींग)
* Cumin (जीरा)
* Green chili(हरी मिर्च)
* Crushed Red chili powder(कुटी हुई लाल मिर्च पाउडर)
* Curry Leaves (कड़ी पत्ता)
* Coriander leaves(धनिया पत्ती)
* Oil(तेल)- For frying
* Salt(नमक)

For Chutney:
* Curd (दही) - 1 Bowl
* Sugar Powder (चीनी पाउडर)
* Oil (तेल)- 1 Tbsp
* Mustard seeds(राई)
* Roasted cumin powder (भुना जीरा पाउडर)
* Asafoetida (हींग)
* Red Chili Powder (लाल मिर्च)
* Curry Leaves (कड़ी पत्ता)
* Coriander leaves(धनिया पत्ती)

✍🏻𝐑𝐞𝐜𝐢𝐩𝐞:
𝐅𝐨𝐫 𝐒𝐚𝐦𝐛𝐚𝐫, soak Toor Dal for 2-3 hours. Transfer it to the cooker, add Water, chopped Pumpkin, Salt to taste, Turmeric Powder, and Ghee, and give 2 whistles. Release the pressure, and whisk it. Then keep the pan for heating add, Oil, Mustard Seeds, Cumin Seeds, Asafetida, Curry Leaves, Whole Dry Red Chili, Green Chili, Ginger, Sambhar Masala, Tomato Paste, Onion, Sehjan Fali, and Carrot and cook well. Then add Salt, Turmeric Powder, Red Chili Powder, Coriander Powder, Tamarind Pulp, and Jaggery. Cook on a slow flame for 10 minutes. Garnish with Coriander Leaves and enjoy!
𝐅𝐨𝐫 𝐌𝐞𝐝𝐮 𝐕𝐚𝐝𝐚, soak Urad Dal for 2-3 hours. Grind it by adding Ice Cube & take it out into a bowl. Add Asafetida/Hing Powder, Cumin Seeds, Green Chili, Chili Flakes, Curry Leaves Salt, and Coriander Leaves and mix well. Then put Asafetida in it. Take a steel strainer, cover it with cloth, apply Water, put batter & make a hole in it (as shown in the video). Fry them in the medium-heated Oil.
𝐅𝐨𝐫 𝐓𝐚𝐝𝐤𝐚 𝐃𝐚𝐡𝐢, take whisked Curd, add Powdered Sugar and mix well. Take a pan, put Oil, Dry Red Chili, Cumin Seeds, Mustard Seeds, Curry Leaves, and Coriander Leaves. Enjoy it with Meduvada & Sambhar. In this way, South Indian Style Medu Vada, Sambhar & Tadka Dahi will get ready.
