Chow - An Anglo Indian favorite.

INGREDIENTS:
1/2kg (1lb) BELLY PORK
1 CARROT
1 CUP OF RUNNER BEANS
1 CUP OF FROZEN PEAS
1 PACK OF SPAGHETTI (COOKED AND STRAINED)
1 TIN OF TOMATOES (BLENDED)
5 CLOVES OF GARLIC (COARSELY CHOPPED OR BLENDED)
3 CHILLIS (SLICED LENGTHWAYS)
2 ONIONS (CHOPPED)
1 TSP TOMATO PUREE
1 TSP TOMATO KETCHUP
4 TBS OIL
GROUND BLACK PEPPER
SALT
- Boil raw belly pork for 5 minutes
- Stain off water and excess fat & salt from the meat (we call this 'skimming')
- Now place in fresh boiling water and boil for 30 minutes until pork is fully cooked
- Slice the cooked belly pork accordingly and set aside in a bowl
- Slice carrot & runner beans and steam/boil until cooked
- Heat up 4 tbs of oil in a pan
- Add chopped onions, fry until lightly brown
- Add blended tomatoes
- Add 1 tsp tomato puree
- Add chopped garlic
- Mix well
- Add sliced chillis
- Add 1/4 tsp salt
- Add 1/2 tsp black pepper
- Add 1 tbs tomato ketchup
- Add frozen peas
- Add cooked belly pork
- Stir
- Simmer for 5 minutes
- Cover and cook for a further 5 minutes
- Stir and add cooked spaghetti
- Carefully mix until sauce is evenly distributed
- Add cooked beans and carrots
- Carefully mix until all ingredients are evenly distributed
