Strawberry Crumble (Square Mousse Ring No. 1 15cm)
55g butter
25g almond powder
70g all-purpose flour
30g sugar
2g salt
Strawberry Jam

1. Gently melt room temperature butter and turn it into cream.
2. Add sugar and salt and whip.
3. Sift the almond powder and flour and then add them.
4. Gently loosen it with a spatula and rub it with your hands to make a small bowl.
5. Please keep half in the refrigerator.
6. Add about 5g of water or milk to the other half, shape it into a loaf, and store it in the freezer.
7. Freeze for 1 hour and then roll out thinly.
8. Put it in a square mousse ring and prick it with a fork.
9. Bake at 180 degrees for 10 minutes.
10. Let it cool and spread strawberry jam on it.
11. Put the refrigerated crumbs on top.
12. Bake at 190 degrees for 13 minutes.
