Here's the recipe for my shallot , cheddar and parmesan tart, it's totally delicious and can be served hot or cold.
I've used a 10 inch loose bottomed tin, but this recipe will also make 6 mini tartlets.

Pastry base,
150g Plain flour,
10g Grated parmesan
75g Unsalted butter
50g Ice cold water.

Blind bake for 10 mins, 180c fan
Remove baking beans, pop back in oven for another 5 mins.

Tart filling,
225g Finely chopped shallot's, browned off in butter,
225g Strong grated cheddar,
1 large egg,
200ml Single cream,
2 tsp Smoked paprika,
2 tsp Thyme,
pinch of salt and pepper.

Finish Tart with another sprinkling of parmesan and paprika.

180c fan for 25 mins.
