What is Dosage? Sparkling Wine Production

Penedès is the wine-region closest to Barcelona and the traditional heart of Cava production.  Joan Cusinè of Pares Balta winery talks about dosage, the process by which the second fermentation is triggered to create the bubbles in sparkling wines.  Also discussed are the terms "disgorgement", "brut nature" and the fact that some people use sherry or old wine during dosage!
