Macarons are delicate french desserts, pistachio is my favorite nut and combination of both together pistachio macarons is in my humble opinion to die for. There is few tricks to make a good macaron: almond flour and powdered sugar should be very fine. egg white meringue should be to perfect marshmallow-ee (if I may say consistency). And finally before baking the macarons, they should rest at the room temperature for around 1 hours till a fine semi firm shell is formed on the surface.

Ingredients:

Almond flour: 60 gr.
Powdered sugar: 60 gr.
Egg whites: 44 gr.
Pinch of salt
Cream of tar tar: 1/4 tsp
Sugar: 43 gr.

Heavy cream: 1 cup
Butter: 1 tbsp
White chocolate: 50 gr.
Grounded pistachios: 1 cup
