Recently I have been receiving lots of request for kids lunch, snack, healthy snacks. And I have even got many complaints from my neighbors, friends about their kids being fussy eaters. Yes they are choosy but even its our responsibility to make those not so tasty veggies into tasty ones.
So this is a small effort by Yummylicious to give you this awesome looking and simply yummylicious recipe which everyone will love and make your kids eat all those raw veggies which otherwise they wouldn't have.
This is a very easy recipe and beautiful looking sandwich as well
So lets get started with this recipe.
Following are the ingredients & procedure :
The main taste booster in this recipe is the Mayo so make it as tasty as possible. This is my way of making it yummy, you can customize it according to your taste.

- Mayonnaise (1/4 Cup)
- Chopped Jalapeno ( 1 Tbsp)
- Chopped pickled Cucumbers (1 Tbsp)
( If you are unable to get those, then simply skip it or add some fresh diced cucumbers)
- Thyme (1/4 Tsp)
( Here I have used fresh Thyme, but you can use dried thyme or italian seasoning )
- Garlic Paste (1/2 Tsp)
( If you jain, or want to skip raw garlic flavor then skip it. I personally like the flavor of garlic a lot in this particular recipe )
-  Oregano (1/4 Tsp)
- Salt & Pepper
( Salt should be added considering the amount of veggies you put in)
- Mix it well
- For this recipe, I accidentally stumbled upon jumbo bread slices ( I bought it from BigBasket )
- But if you unable to recipe jumbo slices then you can stick 2 bread slices together to make a bigger one.
- If you bread is 1 or 2 days older then it will become very difficult to roll so you can microwave it for 10 to 15 sec in microwave with a perforated plate and that will make rolling lot easier and the roll won't break.
-  Cut the edges of the bread slice
- Do not waste these edges as they make great bread crumbs or even brushing garlic butter and baking it will make awesome bread sticks for soup.
- Roll it flat. (As thin as possible)
- Rolling makes it lot easier later and you don't even get larger portions of bread instead of veggies
- Apply water to 1 edge and stick another bread slice
- Water helps to stick it better
- Roll it again where you have place other bread
- Ensure that it is sealed properly
- Apply spiced Mayo on it
- Now comes the veggie part
- Place julienne or thinly sliced red bell pepper
-  Thinly sliced Tomatoes ( I have seeded it before cutting as I do not want to make the bread soggier )
- Julienne Carrots
- Thinly sliced yellow bell pepper
- Stack Green Lettuce leaves
( You can use any lettuce or spinach leaves )
- Last but not least, Thinly sliced Red Cabbage
- Roll it tight;y
- As tight as you can
- At this point you can cut and serve
- Or what I recommend here is :
- Roll it in a cling wrap
- Refrigerate for 30 min
- And then Cut it out
- Refrigeration makes it easier to cut and it even holds the shape better
- So if you are planning to make these for parties, just roll and refrigerate. When your guests arrive, just slice it and serve.
