Vazhuthananga Varuthathu ||  Brinjal Dry Masala- Kerala Style  || Eggplant Fry

Vazhuthananga Varuthathu (Eggplant Fry ) is a easy to make dish with less ingredients. . Which is lightly crispy outside and soft inside. Any type of Brinjal can be used for making Brinjal fry. I used narrow long type and cut into lengthwise. If you are using round/ thick one (eggplant) slice it round wise. The pieces should not be too thin or thick but a medium size slices will be good for the Brinjal pan fry.  Brinjal fry can be eaten as a snack too.

INGREDIENTS
1. Brinjal (Vazhuthannaga) – 2Nos – Slice into medium thin pieces. I used long green brinjal
2. Turmeric powder – 1/2 Teaspoon
3.Green chilli  – 2
4. Salt – As required
5. Oil – For deep frying
6. Kashmiri chili powder - 1/2 tsp
7. curry leaves
INSTRUCTIONS
Mix ingredients 1 – 4 and make a paste.
Marinate the brinjal pieces with the paste for 15 minutes.
Heat oil in a pan and deep fry brinjal pieces till light brown color on both sides.
Then heat oil in a pan add small onion, chilly powder& curry leaves  when it will become light brown color and add fried brinjal pieces and ready to serve
