മട്ടണ്‍ സ്റ്റു||Mutton Stew..Easter Special

Ingredients: (Serves 10-12 persons) Mutton – ½ kg (Cut into small pieces) Potato – 3 big (Chopped into small pieces) Carrot – 1 medium (Chopped into small pieces) Frozen green peas – 3 handfuls Onion – 3 medium (Thinly sliced) Ginger – 1 big piece (Crushed) Green chilly – 10 (Slit open) Pepper powder – 1 tbsp + ½ tsp Coriander powder - 1½ tbsp Garam masala – 1 tbsp Curry leaves Thick coconut milk – 2 cup Thin coconut milk – 3 cup White vinegar – 3 tbsp Ghee Cashew nuts Raisins Coconut oil / Dalda Steps: Add mutton to a pressure cooker, along with half of the crushed ginger, one-fourth portion of the sliced onion, few slit green chillies, 1 tbsp pepper powder, salt, curry leaves and 1 cup water. Mix well. Cook on high flame for one whistle and for another 5 minutes in medium flame. Switch off. Let the pressure release naturally. Set aside. Mutton will be 75% cooked by then. Heat coconut oil in a pan. Add rest of the onion, ginger, green chilly and curry leaves. Once the onion turns golden, reduce the flame and add coriander powder, ½ tsp pepper powder, potato, carrot and peas. Mix well. Add cooked mutton along with the gravy, garam masala, thin coconut milk and salt. Cook covered till the vegetables are cooked. Stir often. Add thick coconut milk and bring it to a slight boil. Add vinegar. When it starts to boil, switch off. In another pan, heat ghee. Add cashew nuts. Once it gets roasted, add raisins. Add this to stew. Mix well and transfer to a serving bowl.
