I have tried a few of Paula Deen recipes and they have been spot on.  The lady can cook, no matter what people think of her.  I tried her Baked Rice Pudding with a little tweak of my own.  I must say its tasty and delicious. You will definitely enjoy this recipe.

Baked Rice Pudding

Ingredients I used:

2 cups cooked rice
2 large eggs
½ can sweetened condensed milk
¼ cup whole milk, or more if needed
½ cup raisins
½ stick butter, melted
2 tablespoons vanilla extract
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Nonstick cooking spray

Preparation:  Preheat oven to 325 degree (double or triple recipe if needed).

Put cook 2 cups of rice in a large bowl. Add 2 eggs to a small bowl, and add a small amount of condensed milk to eggs along with a small about of cooked rice (tempering).  Once mixed together, add egg and condensed milk mixture to the large bowl of rice along with the remainder of the ½ can of sweetened condensed milk.  Add ¼ cup of whole milk, then add melted butter to the mixture and stir.  Next add raisins, vanilla extract, cinnamon and nutmeg.  Mix well, then taste for sweetness. If not sweet enough, add 1 tablespoon of sugar if needed, blend well.  

Add rice mixture to a greased 2 quart deep casserole dish.  Bake until thickened and set, or light brown on top, around 20 to 35 minutes (ovens may vary).
