Pumpkin Chia Seed Pudding

►INGREDIENTS:
1 1/2 cups almond milk unsweetened
3/4 cup pumpkin puree not pumpkin pie filling
3 tbsp maple syrup or honey
2 tsp pumpkin pie spice
1 tsp pure vanilla extract
6 tbsp chia seeds
Whipped cream or Greek yogurt for topping

►DIRECTIONS:
1. In a bowl, add milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla and chia seeds.
2. Stir well with a spoon or fork, let sit for 3 minutes and stir once more.
3. Refrigerate overnight or for at least 6 hours.
4. When ready to eat, give a stir and top with whipped cream or Greek yogurt.
